I made dip the other day. I licked the spoon of sour cream (because it's just so damn good) and thought to myself "Why do I love this stuff so much?". Then I looked at the calorie content, feeling thoroughly betrayed that it contains so much fat. Then, I thought "Where does it come from? How is it made?" Confused, concerned and intrigued, I turned to my best friend, the internet, to help me.
So, I found out that sour cream is made from milk. no shit. Bacteria is added to basically ferment the milk with the creation of lactic acid. It gives it the little kick. Sour cream has been used for centuries. In pre-refridgerator times, the soured part of the milk floated to the top. Save money, use all parts of the cow. Don't worry, pasteurization is still the law. No bad bacterias are allowed in your home.
